Tzatziki

Tzatziki, pronounced Tsaht-ZEE-kee, is extremely delicious and easier to make than you may think. It's creamy, fresh and full of herbs. Whip this up and serve with pita chips and veggies for a refreshing snack.


Ingredients

  • 4 persian cucumbers or half of an english cucumber, seeds removed

  • ½ cup plain greek yogurt

  • 2 teaspoon dill, dried or fresh

  • 1 large garlic clove, minced

  • 2 teaspoon salt

  • Zest of ½ lemon

  • Juice of ½ lemon


Directions

1. Peel and shred cucumbers using a cheese grater.
2. Place cucumbers in cheesecloth or paper towel and squeeze out the moisture.
3. Add cucumbers, greek yogurt, dill, garlic, salt, lemon zest and lemon juice to a bowl and mix until combined.
4. Refrigerate for at least an hour for flavors to combine.

Pro-Tips

Tzatziki is versatile and is a fresh condiment that can be used in sandwiches, as a dressing or a dip. Try it with lamb meatballs or dip your homemade pita chips.
